Profiteroles filled with crème pâtissière which are carefully constructed with toffee to seal it all together.
Elaborately decorated with fine-spun threads of caramel (if weather permitted), flowers, chocolate and at times may also be covered with macarons.
Flavours include vanilla, chocolate, coffee, grand marnier, hazelnut.

A puff pastry cake, which has a small charm, the fève, hidden inside, filled with frangipane. This cake is traditionally shared at Epiphany, on 6th January each year.
